Andy is by far the best sturgeon filleter out there! He taught me everything and I'm proud to say I can cut a fillet pretty well it just may take me 5 to 10 times longer. GREAT job Andy as always!
That's the best way to clean a fish, very clean but what a waste, our culture here in the Philippines has a different way of cleaning it, just gut and scale it, cut to pieces, clean and cook everything including the head and internal organs.
